Hello. Here is the recipe my oldest and I made last night, and it is delicious!
I hope you all enjoy it as much as we did and as much I did making it. I did not use the chocolate as it tasts great without it.
Peanut Butter Fudge
1 C milk
2 C sugar
1 1/4 lb peanut butter
12 oz semi sweet chocolate chips
2 TBSP butter
combine milk and sugar in saucepan. boil the milk and sugar until it reaches the soft ball stage on a candy thermometer. take the pot off the stove add peanut butter and stir vigorously until you see a stringy texture. while the mixture is still fairly liquid pour it into a pan and flatten to form a uniform layer about 3/4 inches thick. cool. meanwhile melt butter in a saucepan on low heat, add chips and melt. immediately spread melted chocolate thinly over top of fudge. cool. cut into 1 inch squares.
Well last week started off not too good. My oldest began vomiting and then was in the bathroom all the time, then it trickled down to my second oldest (thankfully no vomiting from her) and then our littlest member got both end of the bargain, many messy outfits for mommy and him Thank the Lord for washing machines and dryers. Well anyway, Thursday night guess who started having a terrible belly ache? Me! Not good when Mommy thinks she is getting sick and Daddy has to go to work in the morning and Mommy has to breastfeed, clothe, diaper, etc all the little ones So that night I took myself and baby to bed early and when I couldn't go to sleep because of the horrible upset belly I began to pray, isn't that how it almost always is in our busy days, moms? we wait until things are really bad and almost falling apart before coming to lean on our Healer and Comforter? So I prayed that the Lord would reach down and heal me from whatever illness was about to grip me and also to heal the girls and my son. Well I fell asleep, fitfully, but asleep, when I woke up I felt great-or at least better than I did before I went to bed. My belly ache was gone, I had another issue but that could be dealt with during the day. The oldest only had two more bouts of vomiting, the middle still had some of the other, and the baby well his amounted to mainly just a little spit up here and there. We were healed, the Lord heard my prayer, He knew I couldn't take care of three children unless my belly was feeling better-to me besides having a migraine attack there is nothing wose than an upset belly when trying to mother- so He healed me and gave me the compassion to deal with the tail end of the illness of the children.
